West Seneca's Poked Yolk makes eggs EGG-citing

They have a fun name, they are called The Poked Yolk. But make no mistake, owner James Vaughn takes eggs very seriously. You can tell by the orders flying out of the kitchen, the egg art on the walls and the customers that keep coming back. The real magic happens in the kitchen, in James hands, mere eggs are transformed into masterpieces.

With the greatest of ease the young chef whips up the restaurant's "namesake" called the Poked Yolk which includes "chorizo, peppers, onions, pepper jack cheese, over home fries with eggs and toast."

James put in sometime cooking in Las Vegas, but came back home to Western New York to start his own business for a couple of very important reasons "I have two little kids and I wanted to spend time with them."

On the menu you'll find egg dishes like the Three Little Pigs omelet which will be a meat lovers delight because it includes sausage, bacon and ham. James says a customer favorite is his variation on eggs benedict that he calls "Jose Benny" .
