It's a big day for Amy and Mark Powlenko. You could say that this day has been four years in the making. Amy admits that she's 'anxious" and just thinking about "getting her ducks in a row."

This is opening day for the Powlenko's new venture. They have decided to put the brakes on their popular food truck business called Louisiana Cookery and open the doors on a bricks and mortar eatery by the same name. Four years in the food truck business taught Mark and Amy that Western New Yorkers were crazy about Cajun. Amy says their food truck business "caught on like wildfire."

With a built in fan base the couple is cooking up some of their food truck favorites to begin with at the new place-which include Jambalaya, red beans and rice and their best seller crayfish etouffee. Amy says that down the road they will start offering specials like "alligator on a stick."

Of course they have much more space in their new home then they did on the food truck, but Amy says she has big plans for it-"I hope to fill it with people, that's the plan."

Louisiana Cookery is at 1238 Walden Avenue in Depew.
