New butcher shop using "Old World" ways

To see Tom Moriarty work is to witness someone who truly enjoys what he does. He and his wife Caitlin opened Moriarty Meats recently on Grant Street on the West Side. They focus on whole animal butchery. Tom says that for him it's a dream come true adding "It's a passion project."

Tom says the shop is just a hobby. He spent a year and a half in France learning the meat cutting trade and now hopes to recreate the "Old World" kind of butcher shop that's still found in Europe. Tom says "There's a certain romanticism about it that we don't have here."

Most of the meat they use is raised locally.They break down only one animal a week-this week is beef and last week was pork. Moriarty's try to use as much of the animal as possible, often up to 95%. Tom's specialty is European styled cuts that can't be found anywhere else locally.

They open the shop only on Saturdays from 10am to 5pm. You can find moreinformation at their website.
