Peter Flanagan was on a mission to produce the perfect pretzel. Peter is the Chef and culinary arts trainer at the Lockport YWCA. The 10 week program transforms ordinary people into kitchen wizards. According to Peter "at the end of the ten weeks the students are fully ready to work in any kitchen here in the city."
Peter began his "pretzel pursuit" when a local gastro pup gave him a call and said they needed someone to make them some pretzels. Peter jumped at the chance, even though he admits "we never made pretzels before so we had to research it."
Within a short time the chef whipped up a recipe he could run with. Very quickly supplies and equipment were bought and a staff was hired and they were soon putting together their first order of 2000 pretzels.
Proceeds from the pretzels will help to pay for an expansion of the culinary school, a program that's free to those who qualify. More information about the school can be found at their website
