BUFFALO, NY (WKBW-TV) — Chef Andrew Stachura, manager of prepared foods at Lexington Cooperative Markets says there is "science involved" in making a good fish fry.

The Chef says first pick a nice light, flaky fish like cod or haddock. They use cod at the co-op. But the real secret is to use beer in the batter. The Chef says "Beer has CO2 in it and it creates bubbles. Bubbles are your best friend when you're frying, because that gives you a nice crispy coating."

They started selling Fish Fries on Fridays about a year ago. Andrew says you can call your orders in anytime. They are serving up between noon and 8pm.

The Fish Fries are available at the Elmwood and Hertel locations of the Lexington Cooperative Markets.
