He know his cheese and should, after all Brian Bailey has been in the cheese business for 35 years. At Yancey's Fancy Inc. in Corfu, N.Y. Brian is what you might call their "Cheesemeister".
Brian said, "Cheese is not totally understood. There is the science part and then there's the I don't know part."
Brian is the guy who created all those wildly unique cheese flavors that Yancey's Fancy is known for, like Hot Wasabi Horse Radish, Chipotle Habanero and Buffalo Wing. Brian is also the taste tester.
He has invented 37 different flavors over the years, though one of them did present a little challenge: "Grilled Bacon Cheeseburger."
The company employs 160 people and puts out about 12 million pounds of cheese each year. They have just expanded to a large new facility down the road.
While Yancey's Fancy cheeses can be found nationwide, every batch has to first get past Brian Bailey. The man who put's the "fancy" in Yancey's Fancy Cheese.
