Toutant owners to open new restaurant in July

Toutant owners, Connie and James Roberts, are looking to expand their restaurant business with a new seafood restaurant, Dobutsu.

The casual contemporary seafood restaurant will be located on the ground level at 500 Seneca Street - the mixed-use building in Buffalo's Hydraulics District.

The Roberts say the restaurant will use seasonal ingredients and global fish and seafood to prepare regional American and Asian Pacific cuisine. The drink menu will highlight locally made beer and wine, as well as lighter spirits from the region.

The restaurant seats 80 with additional space for over 30 at the cocktail bar. A separate dining bar area will feature a culinary production station for raw and cold menu items, providing an experience similar to noodle bars in Japan and Hawaii. Seasonal seating in a courtyard patio provides extra seats during the warmer months, and a private dining area looks into the main production kitchen.

Dobutsu will have Happy Hour and dinner service Tuesday through Saturday, and lunch will be available Wednesday through Friday.

Dobutsu is expected to open in July.
