Three Buffalo restaurant owners collaborate on new Downtown eatery

BUFFALO, N.Y. (WKBW) — The owners of Buffalo restaurants Marble + Rye, Butter Block, and Remedy House are collaborating on a new place to eat. It all began last summer with a brunch project between the restaurants.

"Marble + Rye ran the bar program, Butter Block handled the food, Remedy House supplied the coffee, and I think it was just something we all looked forward to every week," said Marble + Rye co-owner Christian Willmott. "We enjoy working together, we worked well together, and made a great team."

Now that team is starting something more permanent. The new restaurant, Flint, will open at 50 Fountain Plaza just behind the Hyatt Hotel.

"There will be coffee, there will be pastries, there will be bread," said Willmott. There will obviously be dining options just like we have at all our current locations, but it will be a cohesive brand. So Flint itself will be it's own entity."

Willmott said he's noticed a difference in Downtown Buffalo since he opened Marble + Rye nearly four years ago. He said it's definitely where he wants to be.

"We've just seen really a change, night and day, from then until now," he said. "There's a lot more foot traffic, there's just more people working and living downtown, so when we're looking at new concepts and ideas the only place we really wanted to be at this point in time is in the city."

The location won't just have food.

"The Flint space we hope to really promote as an event space for after hours, so weddings, showers, birthday parties, it's a perfect location," Willmott said. "It's beautiful."

Willmott said there's no opening date yet, but Flint should open by the end of 2019.
