Food waste conversion company to open on Leslie Street

BUFFALO, N.Y. (WKBW) — Buffalo’s East side is making room for a new ecologically friendly manufacturing company.

“We preserve and stabilize food waste so that it doesn’t rot or mold. And we can feed that food waste, once it’s preserved and stabilized, to insects,” managing director of River Road Research Scott Ernst said.

The goal of River Road Research is to convert food waste into protein that can later be used to make as fish or chicken food.

Ernst said this food waste to food source conversion will reduce the carbon foot print of food waste by 75%.

“It’s about the next generation and we wanna make sure that we have a place for the next generation to thrive,“ he said.

Ernst says the company hopes to expand throughout the region in future years.

“We’re Western New Yorkers. We’re Buffalonians. We love Buffalo,: he said. "And we wanted to see that technology developed here.”
