Healthy Options: Even Buffalo's only cheesecake truck has one!

Taste and See has partnered with Independent Health's Healthy Options to bring you fresh recipes and delicious, diet-conscious dishes!

Healthy Options Buffalo is a not-for-profit that helps Western New Yorkers make healthy decisions, whether eating in or dining out.

This week's Healthy Option item is the Lemony Fresh cheesecake found at the Cheesecake Guy, Buffalo's only cheesecake food truck.

Owner Matthew Schelter started the venture three years ago, after his parents gave him their special family recipe.

No, the Cheesecake Guy doesn't have a restaurant, but his food truck can definitely be found on Food Truck Tuesday at Larkin Square.

"There's plenty of dessert restaurants and things like that, but specializing in just cheesecake and doing it really well in a variety of different ways and flavors, has made us successful," said Schelter.

Their healthy option is called the Lemony Fresh! It's a smaller portion cheesecake with low-fat ingredients and topped with fresh berries.

1. Sponge candy caramel pants
2. Ninja turtle
3. Chocolate peanut butter cup
4. Strawberry swirl
5. Oreo/Loganberry

Next year, the Cheesecake Guy plans to unveil a gluten-free, crust-less option served in a dish for our gluten-free friends.
