Michael joined Mercedes in the kitchen to share a tradition in his family that means so much to him. Latkes is a dish that his family makes every year. Not only does it hold personal significance in his life, they are simply delicious. Try this dish at home this Hannukah season and they will quickly disappear from the serving tray!
5 lb bag of Russet potatoes (better for crispier latkes)
1 onion
1 Cup of Matzo Meal
Vegetable oil to fil frying pan about ½ inch to an inch
Salt
Pepper
2 Eggs
Cheesecloth
(Should make between 10-15 latkes)
- Peel potatoes
- Rinse off potatoes
- Grate potatoes into a large bowl
- Grate onions on the thinner side
- Combine shredded potatoes and onions
- Using a cheese cloth wrap the potatoes and onions and squeeze to soak out all the water (This will make for crispier latkes)
- Put mixture in a new bowl add matzo meal, eggs, and pinch of salt and pepper
- Mix well
- Take spoon full of batter to form a latke that’s the shape of your palm in the pan. The thinner the latke the crispier they will be
- Once golden brown on one side flip over
- When its golden brown on both sides put them on a plate covered with paper towels. Dab both sides with napkin to get extra oil off
- Enjoy with apple sauce or sour cream!
