We found a recipe for a frozen pineapple-mango nice cream that’s ridiculously easy to make, requiring just three ingredients and maybe five minutes of prep time.
The recipe on EatingWell calls for frozen pineapple, frozen mango and a spoonful of lemon juice or lime juice. Mix it all up in a high-speed blender and you’ve got yourself a smooth, sweet dessert that also happens to be packed with good-for-you things like vitamin C and manganese, among other nutrients. Both pineapple and mango are also rich in antioxidants and can aid in digestion, too.
Sprinkle some shredded coconut on top and you’ll be transported to the tropics in no time.
For a magical twist on the nice cream recipe, try your hand at making a “nicer” version of the popular Disney vacation treat, Dole Whip, using the quick and easy recipe on Chocolate-Covered Katie which calls for frozen pineapple, coconut milk, lemon juice and a pinch of salt and sugar.
Some nice cream fans, like Instagram user @plantyou, have simplified their pineapple nice cream recipes even further by paring it down to just two ingredients: frozen pineapple and coconut yogurt.
Others, like @foutah.djallon, add new ingredients to the mix, like dates, plus cacao nibs for topping.
Instagram is also chock-full of images of pineapple nice creams beautifully presented inside actual pineapples, such as @mecaplette’s display of two pineapple halves being used as bowls.
And Instagram user @activeandnourished posted a photo of her vitamin-rich post-workout nice cream piled into the bottom half of a hollowed-out pineapple, demonstrating that nature provides us with to-go cups if we just know where to look.
There are approximately one zillion other spins on the nice cream recipe, as you can use basically any frozen fruit combination in your nice cream creations — plus other flavorings and toppings. Try frozen banana with a tablespoon of cocoa powder and a scoop of peanut butter for a decadent, chocolatey frozen delight.
