Zucchini Casserole
4 cups diced zucchini (leave skins on)
2 onions chopped
1 cup shredded cheddar cheese
1 tsp. each salt, pepper, and oregano
4 eggs
½ cup oil
1 cup Bisquick
Mix above ingredients in order. Put in a 2 ½ qt. Casserole dish. (I use a 9 X 13 in. glass dish.) Cover while baking. Bake at 350 degrees for 45 minutes.
