Looking for healthy meals that are easy and delicious? This month's Women In Leadership Honoree can steer you in the right direction!

Eyewitness News is partnering with the Buffalo - Niagara Chapter of the National Association of Women Business Owners on these monthly reports.

Theresa Jackson knows how to serve up food that's good for you and that's why she was chosen to be part of our Women in Leadership series. Eyewitness News Anchor Joanna Pasceri has her story.

Providing healthy and easy meals is Wegmans mission, and Theresa Jackson is one of the people who helps make that happen.
Jackson, a consumer affairs manager for the supermarket chain, connects with both customers and employees.
Jackson has always been passionate about wellness, deciding to become a registered dietitian while in nursing school..
After ten years working in healthcare helping people manage their diseases through food and nutrition, Jackson took a job as a dietitian at Wegmans.
"I really wanted to focus more on prevention, helping people live healthy lives and not get to a point where they were sick," says Jackson.
She says the biggest diet mistake Americans make is not necessarily what they eat, but how much. She says there's always some room for your favorite fattening foods!
