Grilled Pork Tenderloin

Ingredients

Marinade Ingredients

1/2 Tablespoon olive oil

2 Tablespoons fresh rosemary

2 cloves garlic

2 Tablespoons sugar

Pinch of cayenne pepper

 

Caribbean Peach Barbecue Sauce

6 peaches

1 red pepper

1/2 cup cider vinegar

1 cup pineapple juice

1/2 teaspoon ginger

1 cup sugar

1/2 cup coconut milk

1 small jalapeno

2 oz chopped cilantro

1/2 Tablespoon cumin

1 teaspoon garlic powder

1/2 Tablespoon tomato paste

 

Directions

Marinade

Mix the marinade ingredients together

Marinate pork tenderloin for 2 hours

Grill until meat reaches 145 degrees.

 

Caribbean Peach Barbecue Sauce

Mix the ingredients

Bring to a boil in a sauce pan, then simmer 30 minuets.

Serve at room temperature
