Ingredients

1 cup couscous, cooked s per directions

2 celery stalks, 1/4 inch diced

5 hard boiled eggs

1 small green onion, trimmed and chopped.

4 oz mascarpone cheese

2 Tablespoons sweet relish

1 1/2 teaspoon kosher salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/2 teaspoon celery salt

1 red pepper

1/2 Tablespoon butter

Directions

Gently toss couscous together with all the other ingredients

Salt and pepper to taste.
