Eggland's Best Fried Rice: Airdate: 3/10/2008

Ingredients

§         2 green onions -- chopped

§          ¼ cup  green pepper -- chopped

§         3 each  Eggland's Best egg

§         3 cups  rice -- cooked and cooled

§         1/2  cup  peas -- cooked

§         2 tablespoons  soy sauce, low sodium

§         3 tablespoons  canola oil

Directions

Serves 6

Cooking Time: 10

 

 

 

 

 

 

1) Lightly beat eggs. Melt 1 tablespoon oil in skillet or wok. Scramble eggs in oil, breaking up the cooked eggs into small pieces. Set aside.

 

 

 

 

 

2) Melt 2 tablespoon oil in skillet or wok. Sauté onions and green peppers in oil for 3 minutes.

 

 

 

 

 

3) Combine eggs, onions, and rice. Stir in soy sauce until color of rice is uniform.

Stir in peas.

 

 

 

 

 

4)Heat only until warm.
