  • 4 Eggland's Best eggs
  • 3 tablespoons cooked and peeled Shrimp, chopped (3-4 medium)
  • 2 tablespoons whole green onions chopped fine
  • 2 tablespoons  red and green bell pepper chopped fine
  • 1 tablespoon  flour
  • 1/2  teaspoon  soy sauce
  • 24  won-ton wrappers -- 3 1/4  x 3 in
  • sweet and sour sauce (optional)
  • hot mustard sauce (optional)

Steps

 

 

 

 

 

 

 

1) In a medium bowl, beat together eggs, shrimp, onions, peppers, flour and soy sauce until well blended. Set aside.

 

 

 

 

2) Evenly coat 24 miniature muffin cups (1 3/4 x 3/4 inch) with spray. Gently press 1 wrapper into each cup, allowing ends to extend above edges of cup.

 

 

 

 

3) Spoon about 1 tablespoon egg mixture into each wrapper- lined cup.

 

 

 

 

4) Preheat oven to 325 degrees. Bake until knife inserted near center comes out clean, about 12-15 minutes.

 

 

 

 

5) Serve with sauce or mustard if desired.
