We all know how important it is to eat our vegetables, but did you know how you choose to eat them them can add to or take away from their nutritional value?

Nutritionists say the best way to eat vegetables isn't raw like many people think, but it's to prepare them in a way that maximizes the nutrients they contain.  They say steaming preserves the nutrients because it keeps cooking time and temperature to a minimum.  You should steam rather than boil, because boiling veggies can cause them to lose some vitamins into the water they're being cooked in.

Deep frying can penetrate fat into the food, so experts say you should choose to saute over deep fry.  Another easy way to prepare vegetables in a nutritious way is to microwave them, which quickly heats them from the inside out.
