Going gluten free is one of the latest health crazes and it's become a $10.5 billion industry. While only a small portion of people actually suffer from Celiac Disease, those who can not tolerate any gluten, doctors are finding that more and more people are noticing a gluten sensitivity. "Seventy percent of your immune system is located in your GI-tract, so once you begin eliminating gluten, it can really help improve the over all function," said Dr. Alison Cummings. When starting a gluten free, it's important to remember to check labels. Just because something is gluten free does not mean it has less calories or sugar.
