There are many things that you can make on a food truck that would be easier than chicken and waffles, but Raul Parker wasn't looking for easy. He just wanted to offer customers his favorite childhood food.
is truck is called The Dirty Bird and it's been on the road for about a month.
Raul's best friends Chris and Corey help out, and there is plenty to do. The chicken has to be fried, waffles made and the whole thing put together and finished off with the "secret sauce".
Business was booming at a recent lunch hour in Tonawanda. The signature sandwiches were flying out the window but Raul was making it look easy, possibly because his other job is in law enforcement. He joined the Niagara Falls police department in December.
He works 40 or 50 hours a week as a police officer and another 40 on the food truck. He thinks the jobs require similar talents. "You have to be able to multi-task here and in law enforcement and you have to be able to deal with people."
