The restaurant chain, which classifies itself as serving "fast casual" food, announced Monday morning that it plans to open 15 locations in the Buffalo, Rochester and Syracuse areas by 2017.
The restaurants will be operated under two franchise agreements with operating partner Fran DeSimone.
"Our original agreement was for nine locations in Rochester and Buffalo, but the overwhelming reception from the market and enthusiasm for the brand led to an easy decision to develop an additional six locations," said DeSimone in a prepared statement.
The first Corner Bakery Cafe in New York opened last month in the Rochester suburb of Pittsford. The next two locations will open in the Buffalo area in December and early next year.
Corner Bakery Cafe opened its first restaurant in downtown Chicago in 1991. It now has 121 locations across the country.
