Nadja Foods supplies healthy snacks and desserts to the foodservice industry and to retail stores. Now the Buffalo company is out with a line of organic cookies and macaroons, made with 100% certified organic ingredients. Flavors include oatmeal raisin, chocolate chip and chocolate chip macaroons. Founder Nadja Piatka says she is turning up the ovens on her baked good project despite the recession. She says consumers still have to spend money and they're likely to do so on healthy items.
