Bacon Peanut Butter Cookies

Call it "Bacon Mania!'

Bacon isn't just for breakfast anymore. Eyewitness News Executive Producer Lisa Polizzi has found stories about bacon chocolate, and even bacon perfume.

Now "Eyewitness News This Morning" viewer George Kraengel of North Tonawanda caught the "bacon buzz" and submitted a recipe for Peanut Butter Bacon Cookies.

Lisa made the recipe, and served up some cookies for Patrick, Ginger, Jennifer and Elizabeth.

Here is the recipe:

1 stick of butter
1/2 cup baking cocoa
1 1/2 cups sugar
1/2 cup milk
pinch of salt

1/2 cup peanut butter ( smooth or chunky )
1/2 tsp vanilla extract
2 1/2 cups oatmeal ( regular or quick-cook, but not instant )

In a 2 qt. saucepan, mix 1st 5 ingredients together over medium-high heat stirring constantly. Bring to a boil and let it boil for 2-3 minutes. Continue constant stirring.

Remove from heat. Stir in vanilla and peanut butter. Mix long enough to thoroughly melt peanut butter in.

Pour in the oats and mix it all up until everything is well blended.

Drop by blobs (size of your choice ) onto wax paper. Let cool until they come off in one piece.

Now, for the "Bacon!"...Lisa says just sprinkle bacon bits or cooked crispy bacon into the cookie mix before baking, and sprinkle some on top after the cookies are done.

Then, serve them up and become part of the "bacon buzz!"
