5 sweet potatoes (about 2 pounds), peeled and cut into 1-inch chunks
1 cup mayonnaise
1/4 cup honey
1 tablespoon yellow mustard
1/2 cup chopped walnuts
1/4 teaspoon salt

Place the potatoes in a large saucepan and add just enough water to cover. Bring to a boil over high heat and let boil for 12 to 15 minutes, or until fork-tender; drain.
In a large bowl, combine the remaining ingredients; mix well. Add the sweet potatoes and mix until well coated. Cover and chill for at least 2 hours before serving.
