BUFFALO, N.Y. (WKBW) - Premier handcrafted Italian restaurant TOCA (181 Wellington St. W.), located in the heart of Toronto’s Entertainment District, is sharing its passion for artisanal cheeses with a new event series centered around its exclusive Cheese Cave. TOCA’s Cheese Cave Event Series will launch on Saturday, December 5 at 3p.m. with a focus on local cheese producers.
“The first thing I look for when I’m selecting a cheese for TOCA is of course the taste; after that I look for the story. Every cheese has to have a unique quality or story to tell - that’s what excites me the most and I love to share that with my guests,” said Head Chef Jitin Gaba, TOCA.
TOCA’s Cheese Cave Event Series will be led by Head Chef Jitin Gaba, General Manager Peter Muir and resident Sommelier Lorie O’Sullivan. Chef Gaba brings his training as a fromager to the experience, giving foodies an inside look into how cheese is aged and cared for. Muir was born into the food industry growing up in Doolin, Ireland on his family’s jam farm, which propelled him into an international career working with artisanal food producers. O’Sullivan shakes up typical wine and cheese pairing ideas, bringing a unique flair and passion for educating and exciting guests. Having grown up in Niagara’s wine region, she has a deep understanding of the latest innovations and trends in both local and international markets.
The event series will take place once a month and will feature a different theme with unique pairings. Highlights include cheddar and beer, fondue and scotch and soft cheeses with champagne. Guests will learn how to taste cheese and identify flavour profiles, tips for entertaining at home and more.

Canada’s Award-Winning Cheese Tasting Experience ($45) Saturday, Dec. 5 at 3p.m. to 4:30p.m. Local cheese producers are highlighted, paired with a selection of local and international wines.
Winter Retreat Cheese Tasting Experience ($45) Saturday, Jan. 9 at 3p.m. to 4:30p.m. Get cozy and explore cheese pairings that will warm you up including cheese fondue with scotch and much more.
Soft and Bubbly Cheese Tasting Experience ($45) Saturday, Feb. 6 at 3p.m. to 4:30p.m Indulge in a selection of soft cheeses and romantic champagnes and sparkling wines.
International Cheese & Craft Beer Tasting Experience ($45) Saturday, March. 5 at 3p.m. to 4:30p.m Experience international cheeses paired with craft beer selections.
